Ingredients
- 3 –4 lbs beef bones or 2 whole chicken carcasses
- 2 carrots roughly chopped
- 2 celery sticks chopped
- 1 large onion quartered
- 1 whole garlic head cut in half
- 2 tablespoons apple cider vinegar
- 2 bay leaves
- 6 –8 black peppercorns
- 1 teaspoon salt adjust later
- Cold filtered water enough to cover bones
Instructions
Step 1: Optional Bone Roasting (Best for Beef)
- Preheat oven to 425°F (220°C).
- Place beef bones on a baking tray and roast for 30–40 minutes, turning once. This step adds a deeper flavor.

- (Skip roasting for chicken bones if you prefer a lighter taste.)
Step 2: Add Everything to the Pot
- Place bones, vegetables, garlic, herbs, vinegar, and peppercorns into a large pot, slow cooker, or pressure cooker.

- Add cold water until everything is just covered.

Step 3: Cook the Broth
Stovetop Method:
- Bring to a light boil
- Reduce heat to very low
- Simmer gently for 12–24 hours

- Skim foam occasionally
Slow Cooker Method
- Cook on low for 18–24 hours
- Keep lid slightly tilted
Pressure Cooker / Instant Pot
- Cook on high pressure for 2 hours
- Allow natural pressure release
Step 4: Strain and Cool
- Remove large bones

- strain broth through a fine sieve.

- Let it cool at room temperature before storing.

Step 5: Remove Fat (Optional)
- Refrigerate overnight.
- A solid fat layer will form on top spoon it off if desired, or keep it for cooking.
