Key Ingredients
- Ground Beef: The main ingredient for a tender, flavorful meatloaf.
- Breadcrumbs: Panko or regular breadcrumbs add structure and help keep the meatloaf moist.
- Eggs: Act as a binder to hold the meatloaf together.
- Onions & Garlic: Provide natural sweetness and savory depth.
- Milk: Keeps the meatloaf soft and tender.
- Ketchup & Worcestershire Sauce: Add flavor and moisture to the meat mixture.
- Italian Seasoning & Parsley: Fresh or dried herbs enhance the taste.
- Glaze: Ketchup, brown sugar, and vinegar create a sweet, tangy topping that finishes the meatloaf perfectly.

What Is The Best Kind Of Ground Beef To Use?
For the juiciest meatloaf, use 85–90% lean ground beef. Too lean, and the meatloaf can dry out; too fatty, and it may become greasy. You can also mix in ground pork, turkey, or chicken for different flavors, but make sure poultry is cooked to 165°F (74°C).
Is It Better To Use A Loaf Pan or Baking Sheet?
Both work well, but the choice affects texture:
- Baking Sheet: Gives a crispier crust on the edges and a slightly flatter loaf.
- Loaf Pan: Creates a taller, uniform loaf, but the edges may steam instead of crisp.
Either way, the glaze will caramelize beautifully for a flavorful finish.
Variations & Additions
- Cheesy Meatloaf: Add shredded cheddar or mozzarella to the center of the loaf for a gooey surprise.
- Veggie Boost: Mix in finely chopped bell peppers, carrots, or zucchini for extra nutrition.
- Spicy Kick: Add 1 teaspoon Dijon mustard, hot sauce, or paprika to the meat mixture.
- Mini Loaves: Divide the mixture into smaller loaves for faster cooking or individual servings.

Instructions
- Prep Oven and Pan: Preheat oven to 350°F (175°C). Line a baking sheet with foil or lightly grease a loaf pan.

- Cook Onions: In a small skillet, sauté onions over medium heat for 5–7 minutes until soft. Add garlic and cook 1 more minute. Let cool slightly.

Tips & Variations
- Mix Meats: Substitute half the beef with ground turkey, pork, or chicken for a lighter version.
- Extra Moisture: Soak breadcrumbs in milk for 5 minutes before mixing to keep the meatloaf tender.
- Flavor Boost: Add 1 teaspoon Dijon mustard or 1 tablespoon barbecue sauce to the mixture for extra depth.
- Loaf Pan Option: Use a loaf pan instead of a baking sheet for a taller meatloaf, but it may require a few extra minutes to bake through.
