Peach Filling
- 6-7 large ripe peaches peeled, pitted, and sliced
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 tablespoon cornstarch
Cobbler Topping
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter cold and cubed
- 3/4 cup milk or buttermilk for extra tenderness
- 1/2 teaspoon cinnamon for sprinkling
Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
Prepare the peach filling: In a large bowl, toss sliced peaches with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch until well coated. Pour the mixture into the prepared baking dish.
Bake the peaches: Place the dish in the oven for 10 minutes to soften the peaches and release their juices. Remove from the oven while you prepare the topping.
Make the cobbler topping: In another bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt. Add cold butter cubes and use your fingers or a pastry cutter to blend until the mixture looks like coarse crumbs. Stir in milk until just combined.
Assemble the cobbler: Spoon the topping over the warm peaches, covering them evenly but leaving a few gaps for the filling to bubble through. Sprinkle cinnamon over the top.
Bake: Return the cobbler to the oven and bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
Serve: Allow to cool slightly (about 5 minutes) before serving. Best enjoyed warm with vanilla ice cream or whipped cream.
Tips & Variations
- Fruit swaps: You can add blueberries, cherries, or nectarines along with peaches for a mixed fruit cobbler.
- Individual servings: Divide layers into ramekins for personal cobblers; adjust baking time slightly.
- Make it dairy-free: Use plant-based butter and milk alternatives without changing the texture too much.
