- Cooking spray or olive oil
- 8 large eggs
- 1 cup cottage cheese 4% fat or low-fat
- ½ cup shredded cheddar cheese or your favorite cheese
- ¼ tsp salt
- Pinch of black pepper
- Optional mix-ins: chopped spinach diced bell peppers, cooked bacon, chives, or ham
Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with cooking spray or olive oil.
In a blender, combine eggs, cottage cheese, cheddar, salt, and pepper. Blend until smooth.
Divide the egg mixture evenly among the muffin cups, filling each about ¾ full. Add optional mix-ins if desired.
Bake for 20–25 minutes, or until the egg bites are set in the center and lightly golden on top.
Let them cool for 5 minutes before removing from the pan. Serve warm or store in an airtight container in the fridge for up to 5 days.
