- 4 large yellow onions thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1/2 cup dry white or red wine
- 4 cups beef broth
- 2 cups chicken broth
- 1 teaspoon Worcestershire sauce
- 1 bay leaf
- 1 teaspoon fresh or dried thyme
- Salt and black pepper to taste
- 6 slices French bread or baguette
- 1 1/2 cups grated Gruyère cheese
Heat butter and olive oil in a large pot over medium heat.
Add the sliced onions and cook slowly, stirring often, until soft and golden brown. This takes about 45–60 minutes.
Add garlic and cook for 30 seconds until fragrant.
Pour in the wine and scrape the bottom of the pot to release flavor. Let it cook for 3–5 minutes.
Add beef broth, chicken broth, Worcestershire sauce, bay leaf, and thyme.
Bring the soup to a gentle simmer and cook for 30 minutes. Season with salt and pepper.
Toast the bread slices until crispy.
Ladle soup into oven-safe bowls, place bread on top, and cover with cheese.
Broil until the cheese is melted and bubbly. Serve hot.
