  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 2 cups cooked chicken shredded
  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 can 4 oz diced green chilies
  • 4 cups low-sodium chicken broth
  • 1 cup frozen or fresh corn
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper optional
  • Salt and black pepper to taste
  • ½ cup sour cream or heavy cream
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro

Instructions
 

  • Sauté the Base: Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for about 4-5 minutes until soft and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
