Ingredients

  • 2 cups romaine lettuce or mixed greens chopped
  • 1 cup cucumber diced
  • 1 cup cherry or grape tomatoes halved
  • ¾ cup canned chickpeas drained and rinsed
  • ¼ cup red onion thinly sliced
  • ¼ cup Kalamata olives sliced
  • ½ cup feta cheese cubed or crumbled
  • 1 tablespoon fresh parsley chopped (optional)

  • 3 tablespoons extra virgin olive oil
  • tablespoons red wine vinegar
  • 1 teaspoon lemon juice optional
  • 1 teaspoon dried oregano
  • 1 small garlic clove finely minced
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Step 1: Prepare the Vegetables
    Wash all vegetables well. Chop the lettuce into bite-sized pieces. Dice the cucumber, slice the onion thinly, and cut the tomatoes in half.

    Add the lettuce, cucumber, tomatoes, chickpeas, onion, and olives to a large bowl. Gently mix to combine.
